Homemade alpha-gal-safe mayonnaise
Ingredients
1 large chicken egg, at room temperature
1 cup mild-flavored oil (avocado or extra-light olive oil)
1 tbsp fresh lemon juice or white vinegar
½ tsp salt
1 tsp Dijon mustard (optional, for flavor)
Equipment
Immersion blender
Wide-mouth quart jar or a tall, narrow container
Instructions
Add the room-temperature egg, lemon juice or vinegar, and optional mustard and salt to the bottom of the jar.
Pour the oil directly on top of the other ingredients. Do not mix it yet; the oil should form a separate layer on top.
Place the immersion blender into the jar, letting it rest completely on the bottom.
Turn the blender on high and, without moving it, blend for about 30 seconds. You will see a creamy, white mayonnaise begin to form at the bottom.
Slowly tilt and lift the blender up through the oil until all the oil has been incorporated into the mayonnaise. This process should take less than a minute.
Once all the oil is emulsified, turn off the blender. Scrape down the sides of the jar and stir with a spoon to ensure an even consistency.
Transfer the mayonnaise to an airtight container and refrigerate. It will thicken further as it cools and can be stored for up to 10 days.
Important considerations
Egg safety: If you are concerned about using raw eggs, use pasteurized eggs or pasteurized egg yolks.
Dairy sensitivity: Although eggs are not mammalian, some people with alpha-gal syndrome may also have a dairy sensitivity. If this is the case for you, this recipe is safe.
Check labels: To ensure no cross-contamination, always check the labels of your ingredients to confirm they are not processed with mammalian products.
