Ingredients (Alpha-Gal–Safe):
6 medium apples (Gala, Fuji, or Honeycrisp work beautifully), peeled and chopped
½ cup water or unsweetened apple juice
¼ cup maple syrup
1 tsp cinnamon
¼ tsp nutmeg
Optional: pinch of clove or cardamom
1 tsp vanilla extract (added at the end)
Pinch of salt
Instructions:
In a large saucepan, combine apples, water, maple syrup, and spices.
Bring to a simmer over medium heat, then reduce to low. Cover and cook for 30–40 minutes, stirring occasionally, until apples are soft.
Use an immersion blender (or transfer to a blender) to puree until smooth.
Return to the pot and cook uncovered for another 20–30 minutes, stirring often, until thick and spreadable.
Stir in vanilla and salt. Let cool, then transfer to jars. Keeps in the fridge for up to 2 weeks.
