Garlic Herb White Bean Skillet
Ingredients:
2 tbsp olive oil
4 cloves garlic, minced
1/2 tsp dried thyme
1/2 tsp dried rosemary
1/4 tsp red pepper flakes (optional)
2 cans white beans, drained and rinsed
2 cups chopped kale or spinach
Salt and pepper to taste
Juice of 1/2 lemon
Instructions:
Heat olive oil in a large skillet over medium heat. Add garlic, thyme, rosemary, and red pepper flakes. Sauté until fragrant.
Stir in white beans and cook for 5–7 minutes, letting them brown slightly.
Add greens and cook until wilted.
Season with salt, pepper, and lemon juice.
Serve warm with crusty Alpha-Gal–safe bread or over rice.
Kick It Up a Notch:
Add caramelized onions or sun-dried tomatoes
Top with dairy-free parmesan or toasted breadcrumbs
Serve with a drizzle of herbed olive oil
