The "hands off, oven does the work" meal.
Sheet pan dinners are my best friend during low-energy seasons, and this one is embarrassingly simple. Everything goes on one pan, everything roasts together, and the results are caramelized, slightly crispy, and deeply savory. The whole baby onions get sweet and jammy in the oven. The Brussels char at the edges. The sausage browns up beautifully.
This meal requires almost zero active effort. That is the entire selling point.
Low-Energy Version: Don't toss halfway through. Just let it roast the full time undisturbed. A few things will be more charred than others but it will honestly still be delicious. Sheet pans are forgiving.
Substitutions: No Brussels? Use frozen green beans or broccoli. No balsamic? A tiny splash of apple cider vinegar works. No smoked paprika? Just use whatever seasoning you have — this recipe is very flexible.
