Crispy Cabbage & Apple Slaw
Ingredients:
2 cups shredded green and/or red cabbage
1 tart apple, julienned
2 scallions, thinly sliced
2 tbsp olive oil
1 tbsp apple cider vinegar
1 tsp Dijon mustard
Salt and pepper to taste
Instructions:
In a large bowl, whisk together olive oil, vinegar, mustard, salt, and pepper.
Add cabbage, apple, and scallions.
Toss until well coated.
Let sit for 10–15 minutes before serving to allow flavors to meld.
Kick It Up a Notch:
Add toasted sunflower seeds or pepitas
Mix in shredded carrots or fennel
Top with a sprinkle of dairy-free cheese crumbles
