This jam is pure kitchen alchemy—humble onions transformed into a rich, golden spread that’s equal parts sweet, savory, and deeply comforting. It’s the kind of thing you make once and then wonder how you ever lived without it. Slather it on toast, tuck it into sandwiches, or swirl it into sauces for instant depth.
Ingredients (Alpha-Gal–Safe):
3 large yellow onions, thinly sliced
2 tbsp olive oil
1 tbsp maple syrup (or coconut sugar for a deeper flavor)
1 tbsp balsamic vinegar
½ tsp salt
Optional: 1 tsp fresh thyme or rosemary
Instructions:
In a large skillet over medium heat, warm the olive oil.
Add the sliced onions and a pinch of salt. Cook slowly, stirring often, until the onions are deeply golden and soft—about 30–40 minutes.
Stir in the maple syrup and balsamic vinegar. Cook for another 5 minutes until glossy and jammy.
Add herbs if using, and cook 1–2 more minutes.
Let cool slightly, then transfer to a jar. Store in the fridge for up to 2 weeks.
Kick It Up a Notch:
Add a splash of bourbon for a smoky twist
Stir in a pinch of chili flakes for heat
Mix with dairy-free cream cheese for a savory spread
