Thousand Island Dressing
Yields: Approx. 1.5 cups
Notes: A creamy, tangy, and slightly sweet classic reinvented for your alpha-gal-friendly lifestyle. Perfect for Reuben-style sandwiches (with poultry!), wedge salads, or as a dip for roasted vegetables.
Ingredients:
1 cup vegan mayonnaise (e.g., Hellmann's Vegan, Follow Your Heart Vegenaise –
always check labels for any hidden mammalian ingredients)
1/4 cup ketchup (check ingredients for "natural flavors" if highly sensitive; most common
brands are fine)
2 tablespoons sweet pickle relish (or finely minced sweet gherkins/pickles)
1 tablespoon finely minced onion (red or yellow)
1 teaspoon fresh lemon juice
1/2 teaspoon sweet paprika
1/4 teaspoon garlic powder (optional, but adds depth)
1/4 teaspoon sea salt
1/8 teaspoon freshly ground black pepper
Optional: A dash of hot sauce (like Tabasco) for a little kick.
Instructions:
In a medium bowl, combine the vegan mayonnaise, ketchup, sweet pickle relish, and minced
onion, lemon juice, paprika, garlic powder (if using), salt, and black pepper.
Whisk all ingredients together until thoroughly combined and smooth.
Taste and adjust seasoning (salt, pepper, hot sauce) as desired.

○ Ingredients: 1/2 small head green cabbage, cut into 2-inch wedges; 1 tbsp olive oil; salt and pepper.
○ Preparation: Place cabbage wedges in a steamer basket over boiling water. Steam for 5-7 minutes, until tender-crisp. Drizzle with a little olive oil and season with salt and pepper.
Side Dish 2: Toasted Rye Bread (alpha-gal friendly) or Rye Crackers
○ Ingredients: 2 slices alpha-gal-friendly rye bread or a handful of rye crackers.
○ Preparation: Toast rye bread until golden. Serve alongside the meal for dipping in the
Thousand Island dressing.

My Husband is type 1 diabetic, and not sure if it's just my husband or if all Type 1 diabetics are the same. He loves sweet things and hates "Sour". He does have some exceptions. Such as his favorite drink (Alcoholic) is a Lemon drop martini.
This dressing is on the tangy side, so NO, not one of his favorites, I had him "taste test it, as I do with all my creations," and he said YUCK.. However, I put it on some lettuce wedges, with diced tomato and diced turkey, and he loved it. Go figure.
