2 whole heads of garlic
2 tsp olive oil
Pinch of salt
Optional: 1 tsp lemon juice or chopped herbs (thyme, parsley, chives)
Instructions:
Preheat oven to 400°F (200°C).
Slice the tops off the garlic heads to expose the cloves.
Place on foil, drizzle with olive oil, and wrap loosely.
Roast for 40–45 minutes until cloves are soft and golden.
Let cool slightly, then squeeze cloves into a bowl and mash with salt and optional add-ins.
