Ingredients:
1 can chickpeas, drained and rinsed
1 tsp smoked paprika
1 tbsp olive oil
Salt and pepper to taste
1 avocado, diced
1/2 cup cherry tomatoes, halved
1/4 cup finely chopped red onion
Juice of 1 lime
2 cups mixed greens or pita bread for serving
Instructions:
In a skillet over medium heat, sauté chickpeas with olive oil, smoked paprika, salt, and pepper until slightly crispy and fragrant.
In a bowl, combine warm chickpeas with avocado, cherry tomatoes, red onion, and lime juice.
Toss gently to mix.
Serve over a bed of greens or spoon into pita pockets.
